Cookery – 22 August 2016

Every now and then, when we need something sweet and creamy and tangy, we might reach for the cheesecake. This week, we decided to make our own. No oven required!

You will need:

  • Biscuits (we used 1 pack digestives)
  • Butter or low-fat spread
  • Soft cheese/mascarpone/creme fraiche (or a combination). We used 1 large tub creme fraiche and 1 tub mascarpone)
  • Icing sugar
  • Fruit for layering (we used raspberries and blueberries)
  • Plastic cups
  • Spoons
  • Something to bash the biscuits with! (plastic bag plus something heavy to crush with).


The first job was to melt the spread. We did this by putting in a bowl over another bowl of boiling water.

At the same time, a few of us took out any frustrations we had on the biccies! We tried crushing them in the bowl with a mug, then we found a resealable plastic bag and tried smashing them in that. Much better!

Then it was time to combine the soft cheese mix with a couple of spoons of icing sugar, to sweeten it a little.

When the spread had melted, we added enough to the biscuit crumbs to make a sticky paste. We each took a plastic cup and pressed down a layer in the bottom. Then we added a cheese layer. We did this until it was full enough to add some fruit. Ta-da!
